The concept translates literally to "Trust The Chef Please," and it combines coastal Mexican cuisine with the Japanese omakase experience, using vegetables and produce from local farms and suppliers. Lincoln did not have a restaurant like that two years ago. It has one now, and the reservation book proves the demand was already here.

- Brick & Barrel Kitchen + Bar, a local restaurant with beer and wine planned for Lincoln's Joiner Parkway Plaza. Joiner Parkway has needed a sit-down dinner option for years.

- Umami Ramen, Folsom's classic ramen shop expanded to Lincoln. Ramen in Lincoln used to mean a drive to Roseville.

- Rockstar Pizza, opening in the historic Beermann's building in Lincoln. New tenant, one of the most storied buildings downtown.

The through-line: these are not chains landing in a strip. They are independent operators betting that Lincoln has enough weekly dinner demand to sustain a real menu. That is a different thesis about Lincoln than the one the market was working from five years ago.
For a slightly more formal night, Fourk Kitchen brings a chef-driven four-course dining experience to the suburbs, with locations in Folsom and Lincoln, in a relaxed setting. The menus are created by Chef Matt Burger, rotate monthly, and use fresh, seasonal ingredients. There is one seating per evening, doors open at 5:30 PM for a happy hour with chef-optional appetizers and discounted beer and wine, and dinner begins promptly at 6:30 PM with a request that all parties arrive no later than 6:15 PM. If you have been meaning to try it, book on a week when the monthly menu has just rotated.
Thunder Valley is doing more of the heavy lifting this summer
The concert calendar out at The Venue at Thunder Valley Casino Resort is unusually front-loaded. John Fogerty is at The Venue on Friday, June 26, 2026 at 7:30 PM, followed by Summer Jam with Ashanti, Trey Songz, and Twista on Saturday, June 27 at 7:00 PM. Two very different rooms on back-to-back nights. Worth knowing even if you are not going, because Industrial Avenue and the eastbound lanes off Highway 65 get slow around show call time.
